Calibration

Grape to Glass

Achieving Pahlmeyer caliber requires the utmost calculation and care. We hand harvest, block by block, only when each vine has reached optimal ripeness. We pick the fruit before sunup when skins are cool and firm, and sort by hand and optically, before gravity-feeding it to tank. Throughout the fermentation process we employ gentle, thoughtful extraction. We collect the free run juice and press the skins using a basket press. Pahlmeyer wines are bottles unfined and unfiltered to retain the most honest expression of site.

Equilibrium

Power Matched with Finesse

Balance occurs through masterful blending, transformed over time. Our wines are aged in Taransaud and François Frères oak barrels to highlight mountain fruit intensity and fresh acidity. Our most compelling lots are cellar blended in the spring then returned to barrel to finish aging to create wines of complexity and completeness. Pahlmeyer is built to evolve beautifully in the cellar, gaining additional depth and nuance for decades.
