Jayson Late Summer Pairings

I build our Jayson wines in a rich, approachable style to be enjoyed upon release and in the moment — no need for patient cellaring. Blending select Napa Valley mountain fruit with complementing valley floor and hillside fruit, I aim for wonderful aromatics, complexity, and approachability — with a balance of bright acidity to be incredibly food friendly. 

For me, the 2023 Jayson Sauvignon Blanc is the perfect summer wine — amazing with a fresh, light seafood dish like Ahi Carpaccio with Citrus Relish. It’s also great with an Heirloom Tomato Bruschetta or Grilled Sea Scallops with a Mango Salsa.

Our 2022 Jayson Chardonnay is blended with a touch of bright Carneros fruit to give it energy and litheness. This is a great wine to sip with cheese and charcuterie or a summer salad like Chicken Salad with Almonds and Raisins. 

The plush tannins and earthy undertones of our newly released 2022 Jayson Cabernet make it a great match with bold flavors, such as char-grilled lamb lollipops seasoned with za’atar or a grilled porterhouse with chimichurri.

The 2022 Jayson Red Wine is a Merlot dominant Bordeaux blend with wonderful texture and length. I love it with Carolina style barbecue or a bacon cheddar burger. One of the beautiful things about Jayson wines is how they elevate the everyday — and everyday celebrations are the best way to savor the final weeks of the season.

Heirloom Tomato Bruschetta

Ingredients

  • About 2 lbs of ripe heirloom tomatoes, diced
  • 1/4 cup fresh basil, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1/4 tsp sea salt (adjust to taste)
  • 1/4 tsp freshly ground black pepper
  • 1 baguette from your favorite bakery, sliced
  • 1/4 cup grated Parmesan cheese (optional)

Method

  1. Prepare the Tomato Mixture:
    • Combine the diced heirloom tomatoes, fresh basil, and minced garlic in a bowl.
    • Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.
    • Toss gently and let the mixture sit for 10-15 minutes.
  2. Prepare the Baguette:
    • Preheat the oven to 400°F (200°C).
    • Arrange the baguette slices on a baking sheet, lightly brush with olive oil, and toast for 7-10 minutes or until desired golden color.
  3. Assemble the Bruschetta:
    • Spoon the tomato mixture onto the toasted baguette slices.
    • Optionally, sprinkle with Parmesan cheese.
  4. Serve:
    • Serve immediately and enjoy with 2023 Jayson Sauvignon Blanc.
